mutton kofta pulao is an aromatic rice recipe served as a main course. spicy goat meat mince koftas makes this pulao extra special.
mutton kofta pulao or pilaf is made in two steps - first, making of the koftas and secondly, making the pulao.
unlike biryani, where the meat and rice are cooked separately, layered and simmered on dum, pulaos are generally cooked as one pot meal. mutton kofta pulao or pilaf is made in yakhni style as the rice is cooked in whole spices and mutton broth. aromatic spices added are the essence of this pulao. this kofta pulao can be made even with chicken meat as well.
pulaos are mild in taste and gets done quickly. mutton kofta pulao is served with yoghurt raita and salad.

1. First lets make the kofta, combine all the ingredients mentioned for making the koftas and mix well. Form lemon sized balls out of this mixture and keep aside.
2. Heat oil in a kadhai or pan and deep fry the koftas on medium flame till golden brown. Remove and keep aside.

Mutton Kofta Pulao

Ingredients
For making koftas
- 250 grams minced goat meat
- 2-3 crushed green chillies
- 1 teaspoon ginger garlic paste
- 1 teaspoon garam masala powder
- 1 teaspoon red chilli powder
- 2 tablespoons, chopped coriander leaves
- 1 tablespoon roasted gram flour for binding
- salt as required
For making the pulao
- 2 cups basmati rice, washed and soaked for 30 minutes
- 2 green cardamoms
- 1 black cardamom
- 1 inch cinnamon stick
- 1 bay leaf
- 2 cloves
- 2-3 black pepper corns
- 1 teaspoon cumin seeds
- 1 medium onion, finely sliced
- 1 tablespoon, ginger garlic paste
- 4-5 green chillies
- 1/4 cup yoghurt
- salt as required
- chopped coriander leaves for garnishing
- oil
Directions for making kofta pulao recipe
1. First lets make the kofta, combine all the ingredients mentioned for making the koftas and mix well. Form lemon sized balls out of this mixture and keep aside.
2. Heat oil in a kadhai or pan and deep fry the koftas on medium flame till golden brown. Remove and keep aside.
3. In a pot, heat oil and add the whole spices - green cardamom, black cardamom, cinnamon stick, bay leaf, cloves, black pepper corns and cumin seeds. Saute till they start sizzling.
4. Add onions and saute till it starts changing colour. Add ginger garlic paste and green chillies, cook till raw smell of ginger garlic goes off.
5. Add yoghurt and fry for 1-2 minutes or till oil separates.
6. Add the fried koftas one by one and 1 cup of water, cook for 5 minutes. This will give a flavorful in yakhni from the koftas in which the rice will be cooked.
7. Add rice, water and salt, cover and cook till rice is done.
8. Your kofta pulao is ready. Garnish with coriander leaves and serve with yoghurt raita.
