bhindi also known as okra or lady's finger is a most loved vegetables in Indian households. bhindi is prepared in various styles like stir fry with onions, bharwan bhindi, bhindi ka salan, bhindi do pyaza, kurkuri bhindi, bhindi ka raita, bhindi gosht. When buying, always select small, fresh and tender bhindis which are bright green in colour and has no spots.
dahi bhindi is an easy and quick recipe prepared with yoghurt which forms the base of this gravy. dahi bhindi can be prepared in various ways and today I'm sharing one of the easiest ways to make it. this recipe doesn't use onions and if you want, you can skip garlic as well.

Ingredients
- 500 grams lady's fingers
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon mustard seeds
- 2 dried red chillies, broken into halves
- 2 sprigs curry leaves
- 1/2 teaspoon ginger garlic paste
- a pinch of hing
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- 1 teaspoon coriander powder
- 1 cup yoghurt
- salt as required
- oil
Directions for making dahi bhindi recipe
1. Wash and pat dry the lady's fingers. Trim the edges and chop into 1/2 to 1 inch length.
2. Heat oil in a kadhai and saute the lady's fingers till it becomes soft and no sliminess remains. Remove and keep aside.
3. Add some more oil in the same kadhai, and splutter the cumin and mustard seeds. Add dried red chillis and curry leaves.
4. Add ginger garlic paste and saute for few seconds.
5. Add sauteed lady's fingers and the spices - hing, turmeric powder, red chilli powder, coriander powder and salt. Mix and saute for a minute on low flame.
6. Switch off the flame and add whisked yoghurt. Mix everything really well.
7. Now switch on the flame and cook covered for few minutes.
8. Serve dahi bhindi with plain rice or roti.
