Kolhapuri Egg Curry Recipe

Kolhapuri egg curry is an easy and spicy egg curry recipe prepared in Maharashtrian style.

Kolhapuri egg curry is a simple boiled egg curry recipe which uses kolhapuri masala made of fresh desiccated coconut, poppy seeds, sesame seeds, red chillies and some more spices.

Kolhapuri egg curry is not so spicy egg curry but spicy enough to satiate your taste buds. You can increase the amount of red chillies, if you prefer really hot. It goes best with simple plain boiled rice or chapati.

I usually make kolhapuri masala a little more in quantity than required and store in the fridge. This eases up my cooking process as I make other veg and non veg gravies like veg kolhapuri, kolhapuri paneer curry or kolhapuri chicken curry using this pre made masala.

Ingredients 



  • 6 boiled eggs, check how to make perfect boiled eggs
  • 1 large onion, finely chopped
  • 1 teaspoon ginger garlic paste
  • 1 small tomato, chopped
  • 2 tablespoons kolhapuri masala, learn how to make kolhapuri masala
  • 1/4 teaspoon turmeric powder
  • salt as required
  • a bunch of chopped coriander leaves
  • oil

Directions for making kolhapuri egg curry recipe


1. First peel the boiled eggs and poke in the centre with a knife. Fry it in little oil, remove and keep aside.

2. Heat oil in a kadhai, add onion and saute till it turns golden brown in colour.

3. Add ginger garlic paste and saute for a minute.

4. Add tomato, kolhapuri masala, turmeric and salt. Cook till tomatoes are fully mashed up and oil separates. 

5. Add boiled and fried eggs. Saute for a minute in the masala.

6. Add water for making the gravy and coriander leaves. Cover and cook till desired gravy consistency is achieved.

7. Serve kolhapuri egg curry with roti, naan, rice and pulaos.
