Restaurant style zeera rice is a mild yet flavorful rice recipe which can be had with any variety of dals, veg and non veg gravies.
This mildly flavored zeera rice also has a tinge of spiciness of green chillis. If you like crunch of nuts, you can add roasted cashew nuts to this zeera rice recipe.
For zeera tempering
1. Take water in cooking pot, add salt, bay leaf, green cardamom and cloves, bring to boil. Drain the soaked rice and add it to the boiling water. Cook on medium heat for 10-15 minutes or till the rice is cooked.
2. Turn off the stove and drain the cooked rice using colander. Let it sit for 5 minutes.
3. Now spread the rice on a large plate / tray to cool it down completely.
4. Heat oil and ghee in a pan and add the cumin seeds. Saute till the cumin seeds are light brown and there is an aroma emanating from it.
5. Add chopped chillis and saute for few seconds.
6. Add the cooked rice and mix gently so that the cumin tempering is well incorporated. Cover and simmer for 2 minutes.
7. Garnish with coriander leaves and serve along with any variety of dals, veg and non-veg gravies.

Ingredients
For rice- 1/2 cup basmati rice, washed and soaked for 30 minutes
