roasted tomato soup is an easy soup recipe made with roasted tomatoes and few other ingredients like garlic cloves, salt and pepper.
we are not much of a soup loving family and even in restaurants we skip soups for our meals and that is the reason there are not a single soup recipe on this blog. however, my kid loves this roasted tomato soup and I make it specially for him.
few days before, we had made a barbecue on charcoal grill at home for the first time after marriage. along with the seekh that we made, I also roasted a variety of vegetables like tomatoes, brinjals, capsicum, onion and potatoes on the charcoal for making soups and dips.
alternatively, the tomatoes can also be roasted directly on the stove flame or grill it in oven.
this is a very easy soup recipe, you just need to blend all the ingredients in the blender with little warm water. you can adjust the consistency of this roasted tomato soup as per your preference.
1. Brush some oil on the tomatoes and roast them over a charcoal grill or directly on the stove flame or in a preheated oven at 180 C for 25-30 minutes.
2. Let it cool down a bit. Once cooled, peel the roasted tomatoes and chop them.
3. Add it to the blender along with garlic, crushed black pepper, salt and sugar. Also add warm water and blend to a smooth puree. Adjust the thickness as per your liking by adding little more or less water.
4. Pour the soup in serving bowls and garnish with coriander leaves and cheese or cream.
5. Your roasted tomato soup is ready. Serve warm.
