Old Delhi Style Mutton Qorma Recipe

Old Delhi style mutton qorma is the remake of mutton qorma you get near the Jama Masjid area in Old Delhi like the Karim's.

Old Delhi style mutton qorma is my favorite recipe of making mutton qorma among the various types of mutton curries.

To get the best taste of old delhi style mutton qorma, you need to slow cook it on dum. It usually takes around 50 minutes to 1 hour of slow cooking to get the tender mutton pieces.  Alternatively, you can pressure cook for 25 minutes on low flame after the first whistle. I usually do slow cooking on special occassions and go for pressure cooking for our regular cooking.

Old Delhi Style Mutton Qorma

Ingredients


For marination
  • 1/2 kilogram mutton with bones
  • 1 tablespoon ginger garlic paste
  • 1 teaspoon green chilli paste
  • 3/4 cup whisked yoghurt
  • 1 teaspoon red chilli powder
  • 3 tablespoons coriander powder
  • 1/4 teaspoon turmeric powder
  • salt as required
  • 2 tablespoons ghee


For making the gravy
  • 1/2 cup oil or ghee
  • 2 medium sized onions, finely sliced or birista
  • 5 green cardamoms
  • 1 black cardamom
  • 6 black pepper corns
  • 3 cloves
  • 1/8 teaspoon mace powder
  • 1/4 teaspoon kewra water

Directions for making old delhi style mutton qorma recipe


1. First marinate the mutton pieces with the ingredients mentioned under marination and keep aside for 2 hours. 

2. Heat oil or ghee in a kadhai and fry the onions till golden brown in colour. Remove and spread it on an absorbent paper to cool. Once cooled, grind it coarsely and keep aside, this is called birista. You can see the details on how to make perfect birista in my previous post here, how to make perfect birista

3. In the same oil, add green cardamoms, black cardamom, black pepper corns and cloves. Saute for 30 seconds.

4. Now add the marinated mutton and cook for around 15 minutes till all the liquid dries up and the mutton is nicely browned. At this stage the oil or ghee would have also separated.

5. Add the coarsely ground fried onions or birista, give a good mix and cook for few minutes.

6. Add 2 cups of water, bring to boil and then cook covered on low flame for 25 minutes. Stir once in between.

7. Now add mace powder, cover and simmer for 20 minutes. 

8. Lastly, add kewra essence and simmer again for 5 minutes till gravy thickens and oil comes on top.

9. Yummy Old Delhi Style Mutton Qorma is ready. You can serve it with tandoori roti, naan, rice or pulaos.
