Beetroot Pulao Recipe

beetroot pulao is a nice and fragrant pulao recipe using basmati rice and beets as the main ingredient.

beetroot pulao is an easy one pot meal which gets done quickly and also forms an excellent lunch menu. This beetroot pulao is a healthy, colourful and tasty recipe. It also is a perfect lunch box recipe.



It has a mild fragrance from the pulao spices used in tempering. You can also add some veggies like green peas and potatoes along with beetroots.

I'm in love with beetroots and keep including it in my everyday cooking. I have made beetroot pulao yesterday for our lunch and my kid loved this colourful rice alongside a simple raita.

Beetroot Pulao Recipe

Ingredients


  • 1 cup basmati rice, washed and soaked for 20 minutes
  • 3/4 cup beetroots, washed, peeled and chopped
  • 1 bay leaf
  • 1 inch cinnamon stick
  • 2 cloves
  • 2 cardamoms
  • 1/2 teaspoon cumin seeds
  • 2-3 green chillies
  • 1 onion, finely sliced
  • 1 teaspoon ginger garlic paste
  • 1/2 teaspoon red chilli powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala powder
  • a handful of chopped coriander leaves
  • salt as required
  • oil as required



Directions for beetroot pulao recipe


1. In a cooking pan, heat oil and add bay leaf, cinnamon stick, cloves, cardamom, cumin seeds and green chillies. Sizzle for a minute.

2. Add onions and saute till translucent. Add ginger garlic paste and cook till raw smell goes off.

3. Add the chopped beetroots, red chilli powder, coriander powder, garam masala powder and salt. Cook for 8-10 minutes.

4. Add 2 cups of water and bring to boil. Now drain the water from rice and add it to the pan, give a gentle stir and cook till rice is done.

5. Add the chopped coriander leaves and fluff up the rice.

6. Yummy beetroot pulao is ready and can be served with raita.


Notes:


  • You can add a pinch of turmeric to give a yellow colour to this pulao
  • You can also add some veggies like green peas and potatoes.
