Aloo bonda is prepared by using boiled potatoes. These potatoes are then mashed up and seasoned with spices and made into round balls. These balls are dipped in gram flour batter and deep fried in hot oil until golden.

1. Heat oil in a pan and splutter the cumin seeds. Add chopped ginger, curry leaves and green chillies, saute for few seconds.
2. Add onions, cashew nuts, turmeric powder, salt and mix.
3. Add mashed potatoes and coriander leaves. Give a mix and cook for few minutes.
4. Switch off the flame and let it come down to room temperature. Once cooled, make equal sized round balls out of this potato mixture.
5. In another mixing bowl, take gram flour or besan, rice flour, ajwain, baking soda, red chilli powder, turmeric powder and salt. Add little water and make a lump free batter using your hands, the batter should be neither too thick nor too runny.
6. Now dip each potato ball in the batter and deep fry in hot oil till golden brown on all sides. Do it in batches till all potato mixture is used up.
7. Serve hot aloo bonda with chutney or ketchup.

Ingredients
