Paya Curry Recipe

Paya curry recipe is a popular breakfast dish from the city of old Delhi and other surrounding areas. Paya is an urdu word meaning trotters, either of lamb or goat.

Paya curry is a yummy curry recipe made with goat trotters and served as a breakfast specialty in many hotels in old Delhi. 

I usually cook this paya curry for our lunches and enjoy it with freshly prepared roti and rice. Paya in my area is available after smoking it over a coal and fully cleaned, so I don't have to do much, I just soak it in water for around 30 minutes before adding it to the curry.



I cook this gravy in pressure cooker so that it fastens up the process, you can even slow cook it but it will take a lot of time, lot enough to check your patience.

Paya Curry Recipe

Ingredients


  • 6 nos. mutton paya / goat trotters
  • 1 tablespoon whole garam masala
  • 2 medium sized onions, finely sliced
  • 2 teaspoons ginger garlic paste
  • 1/2 cup beaten yoghurt
  • 2 teaspoons kashmiri red chilli powder, adjust as required
  • 1/4 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 1 teaspoon garam masala powder
  • salt as required
  • corinder leaves for garnishing
  • oil as required



Directions for making paya curry recipe

1. In a pressure cooker, heat oil and add the whole garam masala. Sizzle for 30 seconds

2. Add onions and saute till it turns golden brown in colour.

3. Add the trotters and cook on high flame for around 5 minutes by turning continuously.

4. Add ginger garlic paste and cook till raw smell goes off

5. Add beaten yoghurt, red chilli powder, turmeric powder, coriander powder, garam masala powder and salt. Cook till the yoghurt is fully ingrained in the gravy

6. Now add around 6 cups of water and pressure cook on high until 1 whistle. Lower the flame and simmer for around 45 minutes or till the trotters are nicely cooked.

7. Switch off the flame and let the pressure gets released by itself.

8. Now open up the pressure cooker and remove in a serving dish, garnish with coriander leaves and enjoy this yummy paya curry with tandoori roti, naan or pulao.
