Seviyan ka Zarda Recipe

Seviyan ka Zarda recipe is a mild sweet dish prepared with very fine roasted vermicelli and served on special occasions like Eid.

Seviyan ka Zarda is a traditional sweet dish from North India and prepared on special occasions like Eid ul Fitr and Eid ul Adha. Although you can make whenever you crave for having something sweet as it takes very less time to prepare.




The main ingredient in making seviyan ka zarda is extra fine roasted vermicelli. You can also add khoya and if using add and mix in the seviyan when it is fully cooked.

Seviyan ka Zarda Recipe

Ingredients


  • 200 grams vermicelli (very fine variety)
  • 200 gms sugar
  • 2 tablespoons desiccated coconut
  • 6 green cardamoms
  • 1/4 cup almonds, blanched, peeled and chopped
  • 1/4 cup pistachios, chopped
  • a pinch of saffron or yellow food colour
  • 75 grams ghee



Directions for seviyan ka zarda recipe


1. Let's start by making the sugar syrup first. In a pot add water, green cardamoms and sugar. Cook till sugar is dissolved. Add the yellow food color or saffron and cook for few more minutes.

2. In a non stick pot heat ghee till it melts. Add vermicelli and roast it on low flame till it changes to slight golden in color. Keep stirring to cook it evenly.

3. Once its roasted add it to the sugar syrup, also add the chopped almonds and pistachios (reserve some for garnishing later) and bring to boil. Continue cooking till water dries up.

4. Now lower the flame, cover and cook for few minutes till the vermicelli gets soft and all the water dries up. Fluff it with a fork.

5. Remove it in serving bowls and garnish with chopped almonds and pistachios.

6. Yummy seviyan ka zarda is ready to be served.
