Aloo Palak is a Punjabi dish with spinach and potatoes as the main ingredient.

in my home, aloo palak is usually accompanied by dal lucknowi, roti and rice, it is a hit recipe.
palak or spinach has got high nutritional value and is a rich source of vitamins. iron and calcium. I include spinach in my diet by making various recipes like palak paneer, palak pulao, palak pakoda, palak mushroom, saagwala mutton and chicken curry, daal palak, hariyali kababs and many more.
1. Heat oil in a kadhai and splutter the cumin seeds. Add chopped garlic and green chilli, saute for few seconds.
2. Add onions and fry till light golden in colour.
3. Add tomatoes, cumin powder, coriander powder, turmeric powder, garam masala powder and salt. Cook till tomatoes are fully mashed up and oil separates.
4. Add the potatoes and cook till they are 80% done, you may add little water and cover with a lid to get it done fast.

Ingredients
- 1 big bunch of spinach, washed and chopped thinly
- 1 large potato, peeled, cubed and soaked in water
- 1 teaspoon cumin seeds
- 1 teaspoon chopped garlic
- 1-2 green chillies, slit
- 1 small onion finely chopped
- 1 tomato chopped
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon garam masala powder
- salt as required
- 2-3 tablespoons oil
Directions for making aloo palak recipe

5. Now add the spinach and mix. Cook it uncovered, stirring in between for about 8-10 minutes. Do not cook for long or the spinach will lose its nutrient content. You can add little water if required.
6. Serve aloo palak as a side dish along with roti, rice and daal.
Note
- Spinach shrinks a lot after cooking, so add really large quantity.
- You can also use boiled potatoes for this recipe. If using you need to add it in the end along with spinach.
