Chicken Qorma Recipe | Indian Chicken Korma Recipe

chicken qorma is a flavorful and spicy Indian chicken curry recipe made with generous amount of ghee and spices.

chicken qorma is a traditional Indian recipe that uses birista, yoghurt and spices. a pinch of nutmeg and mace powders are added to give it a nice intense flavor.

earlier, I have shared the recipe of birista. it is nothing but deep fried crispy onions that are crushed before adding into the qorma, it results in a nice silky gravy. you can find the details of how to make the perfect birista in the link

addition of kewra or rose water is optional. usually, qormas are served with tandoori roti, naan and pulaos.

Chicken Qorma Recipe

Ingredients 


  • 500 grams chicken
  • 3/4 cup ghee
  • 3 green cardamoms
  • 1 black cardamom
  • 3 cloves
  • 1 inch cinnamon stick
  • 2 bay leaves
  • 4-5 black peppercorns
  • 1/2 cup birista, check the recipe in the link
  • 2 teaspoons ginger garlic paste
  • 1 1/2 teaspoons red chilli powder
  • 1 1/2 teaspoons coriander powder
  • salt as required
  • 1/2 cup yoghurt
  • 1/4 teaspoon kewra water (optional)
  • a small pinch of mace powder
  • a small pinch of nutmeg powder

Directions for making chicken qorma recipe


1. In a kadhai heat ghee and add green cardamoms, black cardamom, cloves, cinnamon stick, black peppercorns and bay leaves, let it sizzle.

2. Add ginger garlic paste and saute for few seconds.

3. Add chicken pieces and cook on medium high flame till it changes colour.

4. Lower the flame and add red chilli powder, coriander powder and salt. Mix

5. Add whisked yoghurt and birista, cook till oil separates.

6. Add 1/2 cup water, cover and cook till chicken is done.

7. Add kewra water and sprinkle nutmeg and mace powders, simmer for another five minutes.

8. Yummy chicken qorma is ready, enjoy with roti, naan, rice and pulaos.

Notes:

  • Qorma tastes best when cooked with ghee, alternatively you can replace it with oil as well.
  • Always add whisked yoghurt on low flame and stir immediately or else the curd will curdle.
