Baingan Pakora Recipe

Baingan pakora recipe is a popular snacks recipe made with roundels of baingan or brinjal which are dipped in a spicy batter and then deep fried.

Pakora is a popular Indian snacks made with any vegetables like potato, brinjal, spinach, cauliflower, cabbage, onions, etc. Non veg pakoras are also made with chicken, fish, prawns or mutton, coated with spicy gram flour batter and deep fried in hot oil. These are widely available as a street food in India and are best savored during monsoons with a hot cup of chai.




There are so many varieties of pakora that can be made and some I've already shared on this blog are aloo pyaz ke pakodefish pakora.

Today I'm sharing a recipe of yet another pakora variety called baingan pakora. In this recipe, thin round slices of baingan or brinjal are dipped in a spicy gram flour batter and deep fried in hot oil till crisp.

Baingan pakoda is served hot with mint coriander chutney or tomato ketchup.

Baingan Pakora Recipe

Ingredients


  • 1 long baingan or brinjal
  • 3/4 cup besan or gram flour
  • salt as required
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon ajwain or carom seeds
  • 1/2 teaspoon ginger garlic paste
  • 1 green chilli, crushed
  • 1/4 teaspoon turmeric powder
  • 1 tablespoon coriander leaves, chopped
  • a pinch of baking soda
  • little water
  • oil for deep frying

Directions for making baingan pakoda recipe


1. First cut the baingan into thin round slices. Apply little salt and keep for 10 minutes. Then wash and keep aside.

2. Make the batter with gram flour, salt, cumin seeds, ajwain, ginger garlic paste, crushed green chillies, turmeric powder, coriander leaves, baking soda and little water. The batter should be a smooth medium consistency without any lumps.

3. Now heat oil for deep frying. Coat the brinjal slices in the batter and gently place it in the hot oil. Add few pieces at a time and fry till crisp and golden on both sides.

4. Remove and keep on an absorbent paper so that it absorbs the extra oil.

5. Serve hot with your favorite choice of dip.
