this vanilla cake recipe is one of my favorite cake recipe, it is light, moist and very flavorful. earlier, I had shared the recipe of eggless vanilla cake using condensed milk.

the method of making this cake is slightly different from other cake recipes as it uses hot milk in which butter is melted. you can slice this cake into two layers and do any frosting of your choice.

Hot Milk Vanilla Sponge Cake Recipe

Ingredients 


  • 1 cup all purpose flour or maida
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons unsalted butter
  • 2 eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla essence

Directions for making hot milk vanilla sponge cake recipe



1. Preheat oven at 180 C for 10 minutes. Grease and line a 7 inch round pan with parchment paper.

2. Sift together all purpose flour, baking powder and salt thrice, keep aside.

3. Heat milk and butter till the butter melts, keep aside.

4. In a mixing bowl take eggs, sugar and vanilla essence, beat till light and fluffy.

5. Add in the flour mixture and beat for a minute.

6. Add in the hot milk and butter mixture and beat till incorporated.

7. Pour the batter in the prepared pan and tap on the counter. Bake for 30-35 minutes or till a skewer inserted in the center comes out clean.

8. Remove the cake from the oven and place it on a wire rack for 5 minutes.

9. Flip the cake on the wire rack and remove the lining paper and let it cool completely.

10. Soft and moist hot milk vanilla sponge cake is ready, enjoy as it is or with any frosting of your choice.


Notes:

  • If you do not have parchment paper, you can use regular white sheets. The method is to first grease the pan with butter, then place the white sheet of paper and grease it again with butter.
