brinjal capsicum sabzi is a unique sabzi recipe that combines the flavours of capsicum (shimla mirch) with brinjal (baingan) and tomatoes and is spiced with masalas.

Brinjal Capsicum Sabzi

Ingredients 


  • 2 brinjals, medium sized diced into cubes
  • 2 capsicums, diced into cubes
  • 1 small tomato, chopped
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon fennel seeds
  • 1-2 green chillies, chopped
  • a pinch of hing
  • salt as required
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon garam masala powder
  • 1/4 teaspoon amchur or dry mango powder
  • a buch of chopped coriander leaves for garnishing
  • oil

Directions for making brinjal capsicum sabzi recipe


1. In a kadhai, heat oil and splutter the cumin seeds and fennel seeds. Add green chillies and a pinch of hing.

2. Add the tomato, turmeric powder, coriander powder, red chilli powder, garam masala powder, amchur and salt. Mix and cook till tomatoes are fully mashed up and oil separates.

3. Add the cubed vegetables - brinjals and capsicums and mix everything well.  Add around 1 cup of water and cook till the vegetables are fully done by stirring occasionally in between. 

4. Your brinjal capsicum sabzi is ready. Garnish with coriander leaves and serve with roti or rice.
