Chicken Fried Rice recipe Indo Chinese Style is an easy and yummy fried rice made using strips of chicken breasts, eggs, veggies and rice.
Chicken Fried Rice is a healthy and yummy option to have with loads of veggies. I prefer my chicken fried rice usually without eggs but I've added it today to go with the standard recipe. Also, you need to keep in mind to cook the rice al dante or else your fried rice will be a disaster. I also recommend using leftover rice as that gives the best result.
You can add as many veggies as you prefer like carrots, capsicums, beans, spring onions, etc. Remember to add salt with caution in the end as there is salt in all other ingredients like the chicken, eggs and the sauces.
1. Wash and soak rice for around 30 minutes. Bring lots of water to boil and add generous amount of salt. Add rice to this water and cook till 80% done. Drain through a colander and let it cool completely. Remember not to over cook the rice and always cool the rice, you can use leftover rice as well.
2. Marinate the chicken pieces in 1 egg white, ginger garlic paste, salt, pepper and a tablespoon of cornstarch. Keep aside for 30 minutes.
3. Whisk the eggs with little salt and pepper.
4. In a kadhai heat oil and fry the eggs first and break with your spatula. Remove and keep aside.
5. Next add little more oil and fry the chicken pieces on high flame till it is nicely cooked. Switch off the flame and add the soya sauce, red chilli sauce and vinegar. Keep as it is.
6. Now heat oil in a wok and add chopped ginger and garlic and saute for a minute.
7. Add chopped onions and spring onion whites and fry for few minutes
8. Now add the cooked chicken along with the sauces. Cook till the sauce thickens
9. Add the chopped carrot and capsicum and cook for 4-5 minutes
10. Add rice, salt, pepper and green parts of the spring onion. Mix well and fry for around 3-4 minutes
11. Yummy Chicken Fried rice is ready to be served.
