Carrot Rice Recipe

Carrot rice is a mildly spiced and colorful, yet a healthy rice recipe with the goodness of carrots.

Carrot rice is a simple Indian rice recipe that can be easily prepared and makes for a perfect kids lunch box recipe as well.

Carrots are a main source of Vitamin A and they must be included in our diet in any form. Making this rice is one delicious way of doing so.




I have prepared the carrots separately and just mixed the cooked rice. Alternatively, you can cook both together using pressure cooker. Addition of whole spices brings flavor to the rice. You can also use leftover rice in preparing carrot rice.

You can serve this carrot rice along with some dry sabzi or as it is just with raita and some papads.

Ingredients


  • 1 cup rice, washed and soaked for 30 minutes
  • 1 bay leaf
  • 2 green cardamoms
  • 1 teaspoon cumin seeds
  • 1 medium onion finely sliced
  • 1 teaspoon ginger garlic paste
  • 1 cup grated carrot
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chilli powder
  • salt as required
  • few cashews
  • 1 tablespoon chopped coriander leaves for garnishing
  • oil as required


Directions for making carrot rice recipe


1. Cook rice and keep aside.

2. Heat oil in a pan and fry the cashew nuts. Remove and keep aside for later use

3. Add bay leaf, cardamom and cumin seeds, saute till they crackle.

4. Add onions and cook till it turns light golden in colour. Add ginger garlic paste and cook till raw smell disappears.

5. Add carrots and cook for few minutes.

6. Add garam masala, red chilli powder and salt, mix and cook for around 5 minutes on low flame.

7. Add the cooked rice, mix and cook for another 2-3 miuntes.

8. Spread the fried cashew nuts and coriander leaves

9. Serve carrot rice along with raita.

Notes:


  • You can use leftover rice as well for this recipe
  • You can finely chop the carrots instead of grating them and it will require a little bit extra time for cooking
